Lemon Poppyseed Muffins

Last time I made these I actually forgot the lemon rind! They were poppyseed muffins and they were lacking for a lot of flavor. We still ate them of course. ;-)

These HAVE the lemon rind and are SO good. I dip the tops in a glaze made of lemon juice and powdered sugar. Makes a yummy Saturday breakfast treat. Oh, and they're made someahat healthy with half whole wheat flour, applesauce/canola oil substitute, and ground flax seed. Delicious CAN be nutricious!
